2020 Honey White Tea -Winter (Dong Pian 冬片)
Material found in the indigenous forest of Chang Mai Thailand, processed by experienced tea master from Taiwan.
These bug bitten tea trees which are about a meter tall, grow without the use of any agrochemicals and with barely any interference from human. Growing at the elevation of 310 meters, it is an area with a big difference in temperature between day and night especially in winter, a difference as big as 15 degrees, resulting in liquor that is rich, thick and full of pectin that feels like it will almost coagulate.
Tea trees usually bloom right before winter and will go into a short period of hibernation but due to global warming, the tea trees are trick into thinking spring is already here so they begin budding again and farmers will harvest these precious leaves which are named Dong Pian which translate to winter slices. Dong Pian do not appear every year and when they do, they are around for harvest for only one week. Due to the warm winter, the jassids are also around, busy feasting on these delicious Dong Pian. These bug bitten Dong Pian yield liquor that are sweet with a light but yet addicting floral notes.
When we heard the news that there was Dong Pian in the beginning of winter of 2020, we could not wait to go talk to tea master with family member who migrated to Chang Mai, Thailand and had found quite a lot of tea trees growing in the wild.
Good material in the hands of experienced Taiwanese tea master gives a mesmerizing white tea that is fruity with peach as the dominant flavor. Tea has rested for over a year now and it is softer and smoother, but just as vibrant as before, a tea worth aging.
